BBQ Beef Brisket 

 

The ingredients for this meal are for a serving of 4-5 

people.

 

-3 lb piece grass-fed beef brisket, trimmed of fat

-2 cloves fresh garlic, minced

-¼ cup sweet onion, minced

-1 bottle chili sauce, low sugar

-1 quart organic beef stock, low sodium

-1 tsp freshly cracked pepper

-1 tsp sea salt

 

BBQ Beef Brisket

Preheat oven to 350F. Place brisket in baking pan and top with garlic and onion. Add chili sauce and ½ of beef stock. Stock should be about 1 inch deep in pan. Season the beef with sea salt and freshly cracked pepper. Cover with foil and place in oven. Bake for 1 ½ hours, then remove from oven and carefully turn meat over in pan. Add additional stock if liquid is less than 1 inch deep in pan. Replace foil and place back in oven. Bake for an additional 1 ½ hours. Check beef for doneness after 1 additional hour. Beef brisket is done when fork inserts easily. Let rest for 5 minutes. Slice beef and serve with sauce. If sauce is too thick, thin with hot stock. Serve with cauliflower mash and steamed rainbow vegetables.

Grilled Balsamic Grass-Fed Sirloin Steak

 

The ingredients for this meal are for a serving of 4 

people.

 

-4 pieces grass-fed sirloin steaks (4 oz each)

-2 cloves garlic, minced

-2 tbsp EVOO

-1 tbsp balsamic vinegar

-1 tsp freshly cracked black pepper

-1 tsp sea salt

 

Grilled Balsamic Grass-Fed Sirloin Steak

Combine all ingredients, mix well, and pour over steaks in shallow pan. Marinate for 15-20 minutes. Preheat grill to medium-high. Place steaks on grill and cook about 4 minutes per side or until internal temperature reaches 140 degrees (medium. Remove steaks from grill and let the steaks rest for 3 minutes before serving. Steaks can also be pan seared or oven roasted.
