Apple Cider Chicken Breast

 

 

The ingredients for this meal are for a serving of 4 people.

 

- 4 pieces organic chicken breast, boneless and skinless

- 2 cloves garlic, minced

- 2 tbsp extra virgin olive oil

- 1 tbsp apple cider vinegar

- 1/2 tsp freshly cracked pepper

- 1/2 tsp sea salt

Apple Cider Chicken Breast

 

Combine all ingredients in bowl and mix well. Place chicken breasts in shallow pan and pour mixture over top. Marinate for 20 – 30 minutes. Preheat grill to medium high. Place chicken on grill and cook

3-4 minutes per side or until internal temperature reaches 165F. Remove chicken from grill and let rest for 3 minutes before serving.

 

Spicy Chicken and Shrimp Gumbo

 

The ingredients for this meal are for a serving of 4-6  people.

 

- 3 tbsp evoo

- 6 pieces chicken thighs, skinless, boneless

- 3 links turkey Italian sausage hot, sliced

- 1 cup onion, diced

- 1 pablano pepper, seeded, diced

- ½ cup celery, diced

- 5 garlic cloves, chopped

- 1 cup dry red wine

- 1 quart chicken stock, low sodium

- 2 cups water

- 2 teaspoons cayenne pepper

- 1 tsp sea salt

- 1 can tomatoes, diced, drained

- ½ pound medium wild shrimp, peeled and deveined

- 1 tsp black pepper, ground

- 1 cup brown basmati rice

 

Spicy Chicken and Shrimp Gumbo

Heat a large pot to medium high. Add oil and chicken. Cook chicken for 5 minutes or until well browned. Flip chicken and cook for an additional 3 minutes. Reduce heat to medium and add sausage, onion, celery, pepper and garlic. Cook an additional 3-5 minutes stirring frequently. Add wine, chicken stock, water, pepper and tomatoes and rice. Turn heat to medium low and simmer for 15-20 minutes. Add shrimp and simmer for about 15 minutes. If gumbo seems too thick add more water or chicken broth. Test rice to see if tender. If rice is still hard simmer a few more minutes until tender.
