Gluten Free Banana Muffins

 

1/2 cup Organic Oat flour

1/4 cup Almond flour

1/4 cup Sorghum flour

1 1/2 tsp baking powder

1/4 cup canola oil

1 tsp vanilla extract

3 eggs

3 medium bananas, ripe

1/4 cup mini dark chocolate chips (optional)

 

 Preheat oven to 350. Combine dry ingredients in medium size bowl and mix well. Combine oil, vanilla, bananas and eggs in a food processor and blend until smooth. Combine banana mixture into dry ingredients and mix well. Let batter rest for 5 minutes. Coat a muffin pan with oil or pan spray. Divide batter evenly in muffin pan. Bake for 18-20 minutes. let cool. Makes about 12 large muffins.
