Asian Chicken Salad

 

The ingredients for this meal are for a serving of 1 

person.

 

-1 chicken breast, boneless and skinless, grilled, chilled and diced

-¼ cup tomatoes, diced

-¼ avocado, diced

-2 tbsp sweet corn fresh or frozen

-¼ cup black beans

-1 tbsp scallions, chopped

-2 cups mixed greens

-1 tbsp lime juice

-2 tbsp EVOO

-½ tsp chili powder

-Sea salt and fresh cracked pepper to taste

To serve, in a small bowl mix lime juice, EVOO, chili powder, salt and pepper. Place greens on plate and top with remaining ingredients. Drizzle with dressing and serve.
